Broken Rice pudding(Neypayasam) is a very popular South Indian dish usually made as an offering to god in temples and hence its consider divine. Its a rich and healthy dessert made with broken red rice, jaggery and clarified butter(ghee). The perfect blend of jaggery, clarified butter and cardamom will definitely tempt you to have it again and again.

What all you'll need?
- Broken Red Rice(onakkallary) - 1 cup
- Jaggery/Molasses - 2 cups
- Clarified Butter(Ghee) - 1/2 cup
- Cardamom Powder - 2 teaspoons
- Broken Cashewnut - 2 tablespoons
- Raisins - 2 tablespoons
- Water - As required
If you don't have the broken red rice, you can always go with white rice. It tastes best with broken red rice.
Let's cook it!!
- Heat a pan and add a teaspoon of the clarified butter. Once its warm, add cashews and raisins. Wait for the cashews to turn light brown in color and the raisins to plump up. Turn off the stove and keep it aside.
- Wash rice with water and drain the water.
- Heat a pressure cooker and add the rest of the clarified butter. Once its warm, add the rice to the cooker. Stir fry it for a couple of minutes.
- Pressure cook the rice with about 2 cups of water until 3-4 whistles. Turn off the stove.
- Meanwhile, heat another pan add about a cup of water and add the jaggery/molasses. Wait until the jaggery is dissolved and it forms a thick syrup. Turn off the stove and strain the jaggery syrup.
- Add the jaggery syrup to the cooked rice and mix it well. Cook it well until the jaggery syrup is coated well on the rice and it forms a thick paste like consistency.
- Once all the jaggery syrup is absorbed, turn off the stove and garnish it with the cashewnuts, raisins and cardamom powder.
