Whole Wheat Vettu Cake


Vettu cake is a very popular snack served in small tea stalls(chaayakkada) in Kerala. It's a deep fried sweet cake (can also be called as Kerala style donut) which goes perfectly well with an evening cup of tea. It usually has very few ingredients and can be made very easily. The usual preparation of the cake is with all purpose flour, white sugar and egg. Here is my try on vettu cake with healthier ingredients.

What all you'll need?

  • Whole Wheat Flour - 1 cup
  • Dark Brown Sugar - 1/2 cup -3/4 cup (depending on how sweet you like)
  • Egg - 1 ( I used organic brown egg)
  • Baking Soda - 1/4 teaspoon
  • Cardamom Powder - 1/2 teaspoon
  • Coconut Oil - for deep frying

Let's cook it!!

  1. Add egg and sugar to a mixing bowl and mix them well until it forms into a creamy texture. 
  2. Mix dry ingredients ( Whole Wheat flour, Baking soda, Cardamom powder) together in a bowl.
  3. Add the dry ingredients (Step 2) to the egg, sugar mixture (Step 1).
  4. Mix everything together and knead well to form a soft dough. Let the dough rest for 10-15 minutes.
  5. Form the dough into a rectangular log and using a knife, cut the log into 1" small pieces.  Make a small cut in the center of the small pieces to give the cakes a unique shape and hence the name Vettu(cut) cake.
  6. Heat coconut oil in a pan/kadai and add the cakes to the oil. Deep fry the cakes in a medium heat, so that they cook evenly until the cakes are golden brown in color. 
  7. Transfer the cakes to a paper towel and let it cool. 
  8. Store the cakes in a airtight container at room temperature for up to a week.
