Chutney powder(dosa podi, milaga podi) is a combination of some lentils, rice, dried red chili and black pepper. It is a perfect accompaniment for idli or dosa. It also goes well with rice and ghee/clarified butter. It can be made in different styles and with different pulses. Here is my my way of making it.

What all you'll need?
- Urad Dal - 1 cup
- Rice - 1/2 cup
- Lentils(Toor Dal) - 1/4 cup
- Black Pepper - 2 tablespoons
- Dried red Chili - 6
- Asafoetida Powder - A pinch
- Salt - 1/2 teaspoon or to taste
To add flavor to the powder, you can dry roast some curry leaves and grind it together with other ingredients.
Let's cook it!!
- Dry roast urad dal, rice, lentils(toor dal), dried red chili, black pepper separately until its golden brown in color or it emits a nice aroma.
- Grind everything(including asafoetida powder and salt) in a mixer/grinder to a fine powder. Store the spice powder in an airtight container.
