A really simple recipe of potato which I should say is just mouth watering. It only has very few ingredients and is super easy to make.

Cook Time:

15 Minutes

Yield:

4 Servings

Ease of Cooking:

Easy

What all you'll need?

  • Potatoes - 4 medium sized cut into small cubes
  • Turmeric Powder - 1 teaspoon
  • Chili Powder - 2 teaspoons
  • Salt - As required
  • Coconut Oil - 3 tablespoon
  • Mustard Seeds - 1 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Curry Leaves - A bunch
  • Dried red Chili - 1
  • Green Chili - 2 sliced vertically into 2 pieces
  • Water - 1/2 cup

Let's cook it!!

  1. Add turmeric powder, chili powder, salt and a few drops of oil to the cubed potatoes and coat the spices evenly on the potatoes and keep it aside for at least 10 minutes(Marination).
  2. Heat coconut oil in a heavy bottom pan. Add mustard seeds, cumin seeds, curry leaves and dried red chili. Once the mustard seeds splutter add the marinated potatoes, green chilis and saute it well.
  3. Drizzle water over the potatoes, cover and cook in medium flame until the potatoes are roasted well and are golden brown in color. Make sure you saute it in between to avoid burnt potatoes.
