Eggless Mango Nut Custard Cake

If you are a custard lover, this cake is for you. This is a perfect snack cake for teatime as its not overly sweet. Just give it a try and I am sure you will love it!

What all you'll need?

  • All purpose Flour - 1.5 cups
  • Mango Custard Powder - 3/4 cup
  • Baking Powder - 2 teaspoons
  • Butter - 1 stick/0.5 cup at room temperature
  • Sugar - 3/4 cup
  • Cashew nuts/Almonds - 3/4 cup
  • Ripe Mango(cut into small pieces) - 1/2 cup
  • Milk - 1 cup

Let's cook it!!

  1. Preheat oven at 350 degrees F or 180 degrees C.
  2. Prepare a cake tin by greasing it will butter/oil and set it aside (I used a bread loaf pan).
  3. Add butter and sugar to a mixing bowl. Blend them well using a hand mixer until it forms a creamy batter.
  4. In another bowl, add all purpose flour, custard powder and baking powder. Mix them well until all the powders are blended well.
  5. Now, add the powder mixture (step-4) slowly to the creamy batter (step-3) and mix them well by adding milk to form a semi-thick batter.
  6. Add mango pieces and nuts to the batter and mix them well.
  7. Transfer the cake batter to the pan and bake it for 45 minutes to an hour depending on the temperature of your oven.
  8. You can check whether its ready by inserting a tooth pick into the cake. If it comes out clean and non sticky, your cake is ready to be taken out of the oven
  9. Once its cool, cut it into pieces and enjoy!
