Whole Wheat Cardamom Nut Cake

Cardamom Cake
Cardamom- A quintessential ingredient in any traditional Indian dessert. I love cardamom so much, that I try to incorporate the wonderful spice in most of my dishes including savory and sweet:) Here is my try on a cake that's flavored with one of the most exotic spice, cardamom. A perfectly healthy cake!

What all you'll need?

  • Whole Wheat Flour - 1 1/2 Cups
  • Ground Cardamom - 1 tablespoon
  • Baking Powder - 1 teaspoon
  • Baking Soda - 1/2 teaspoon
  • Dark Brown Sugar - 3/4 - 1 cup(depending on how sweet you like)
  • Coconut Oil - 1/2 cup (You can replace it with your choice of oil/butter)
  • Buttermilk - 1 cup
  • Salt -A pinch
  • Cashew nuts - 1/2 cup

Let's cook it!!

Cardamom Cake
  1. Preheat oven to 350 degree F/180 degree C
  2. Prepare a loaf cake pan with butter/non stick spray and line the pan with a parchment/butter paper.
  3. Add dry ingredients (Flour, Cardamom, Baking Powder, Baking Soda, Salt) to a bowl and whisk them well.Set it aside.
  4. Add sugar, oil and buttermilk to another bowl and beat them well using a hand mixer/whisk.
  5. Slowly fold the mixed dry ingredients (Step 1) into the bowl with the wet ingredients (Step 2) until everything is combined well to form a batter. Make sure not to over-mix it.
  6. Slowly fold the nuts into the cake batter (Step 3). 
  7. Transfer the cake batter to the cake tin ( Step 2) and bake in the oven for about 35-45 minutes depending on the temperature of the oven or till a tooth pick inserted into the center of the cake comes out clean.
  8. Transfer the cake tin to a wire rack and let it cool completely.
