Spicy Veggie Soup


A warm soup is a perfect start for a cold winter day. So here I am sharing the soup recipe that I tried recently and was a big hit in my home. This is a tweaked version of a Tibetan soup which is loaded with veggies and spices. A simple and nutritious dish which is a complete meal for any time of the day. Try it out for yourself and I bet you will be hooked to it.

What all you'll need?

  • Spaghetti/Noodles (Cooked) - 1 cup
  • Broccoli florets - 6-7
  • Carrot ( cut into bite size pieces) - 1
  • Spinach leaves - 9-10
  • Tomato (cut into bite size pieces) - 1
  • Onion/Shallots (cut into bite size pieces) - 1/2 cup
  • Ginger (chopped) - 2 teaspoons
  • Garlic (chopped) - 2 teaspoons
  • Green Chili (sliced)- 2 
  • Dried Red Chili flakes - 1 teaspoon
  • Turmeric Powder - 1 teaspoon
  • Soya Sauce - 1 tablespoon
  • Salt - 1/2 teaspoon or to taste
  • Cumin seeds - 2 tablespoons
  • Coriander seeds - 2 tablespoons
  • Cinnamon Stick - 2 " stick
  • Cloves - 1 tablespoon
  • Cardamom - 5-6
  • Black pepper - 1 tablespoon
  • Olive Oil/Butter - 2 tablespoons
  • Vegetable stock - 4 cups
  • Cilantro(chopped) - for garnishing
  • Grated cheese- for garnishing( I used mozzarella)

Let's cook it!!

  1. Add whole spices(cumin, coriander, cinnamon, cloves, cardamom,black pepper) to a hot pan in the stove and dry roast them in medium flame until the spices emits a nice aroma. Make sure you don't burn the spices while roasting.
  2. Take the pan with the roasted spices off the stove and let it cool for a minute or so. Grind the spices to a fine powder in a mixer/grinder. Keep it aside.
  3. Add butter/olive oil to a heating pan in the stove. Add onions to the pan and saute until it's soft and turns pink in color. 
  4. Add chopped garlic, green chili and ginger to the onions and saute it until the raw smell of ginger and garlic are gone. 
  5. Add tomatoes to the pan and saute it well. Add turmeric powder and chili flakes to the pan and mix it well.
  6. Add soya sauce to the pan and mix it well. Add 1 tablespoon of the ground masala(Step 2) to the pan. Add vegetable stock to the pan. Stir it well.
  7. Add veggies (carrots, spinach and broccoli) to the pan and let it boil for a minute. Add salt to taste.
  8. Add cooked noodles/spaghetti to the pan and let it boil for a minute and turn off the stove.
  9. Transfer soup to a serving bowl and garnish with cilantro and grated cheese before serving.
