What all you'll need?
- Fine Semolina/Sooji - 2 cups
- Yogurt/Curd - 3 cups
- Chopped Ginger - 2 teaspoons
- Chopped Green Chili - 2 teaspoons
- Mustard Seeds - 1 teaspoon
- Urad Dal - 1 teaspoon
- Peanuts - 2 teaspoons
- Curry Leaves - A bunch
- Coriander Leaves/Cilantro - A bunch
- Oil - 2 teaspoons
- Clarified butter/Ghee - 2 tablespoons
- Sugar - 2 teaspoons
- Salt - As required
Let's cook it!!
- Heat a medium sized pan. Add oil & clarified butter/ghee to the pan. When the oil is hot, add mustard seeds, urad dal & curry leaves.
- Once the mustard seeds splutter, add the peanuts,chopped ginger and green chili.
- After a minute add the semolina/sooji to the mixture and fry it until the semolina/sooji turns light brown in color.
- Add sugar, salt and coriander leaves/cilantro to the fried mixture. Mix it well.
- Add yogurt/curd to the mixture and make a semi-thick batter.
- Fill the idli mold with the batter and steam it in the idli cooker for 15-20 minutes. You can add cashews on each of the idli mold as a decoration.
If you don't have idli cooker you can transfer the whole batter to a dish and steam it for 15-20 minutes. Once its cool cut it into square pieces and enjoy.
