Coffee Cake


A homemade simple evening snack is always a pleasure to have. This is one of my favorite coffee cake. The richness of cashews and the sweetness of chocolate chips makes this one of the best coffee cake. Its super easy to make and tastes awesome.

What all you'll need?

  • All purpose flour - 1 cup
  • Cornflour/Cornstarch - 3 tablespoons
  • Sugar - 3/4 cup
  • Baking Powder - 1 teaspoon
  • Unsalted Butter(at room temperature) - 1 stick(113 grams)
  • Eggs - 2
  • Vanilla Essence - 1 teaspoon
  • Broken Cashew nuts/Walnut/Pecan/Almond- 1/4 cup - 1/2 cup
  • Semisweet/Dark Chocolate Chips - 5 tablespoons
  • Milk - 1/2 cup

Let's cook it!!

  1. Preheat Oven to 350 degrees F or 180 degrees C.
  2. In a mixing bowl, add all purpose flour, cornflour and baking powder. Mix the powders well. After that sieve them through a strainer so that everything is evenly distributed.
  3. In another bowl, add butter and sugar and whisk until a fluffy - smooth batter is formed. To this mixture add 2 eggs, one at a time and whisk them well using a blender.
  4. Add flour mixture and milk to the above batter slowly and whisk them well.
  5. Add vanilla essence, cashew nuts and chocolate chips to the cake batter and whisk until it forms a semi thick batter.
  6. To prepare the cake pan, lightly butter the bottom of a loaf pan and dust with flour. Add the batter to the pan.
  7. Bake for 45 minutes to an hour depending on the temperature of your oven.
  8. Remove cake from the oven and allow the cake to cool.
  9. Flip it off the pan and slice into pieces.
Enjoy the chocolate nutty cake with your hot coffee!
