Pumpkin & Black Eyed Peas Curry


This is a traditional semi-solid side dish which can be prepared in a matter of minutes. This dish is sweet and spicy with the sugary taste of pumpkin and hotness of chilies. Black eyed peas adds flavor and thickness to the dish.

What all you'll need?

  • Pumpkin (cut into bite size pieces) - 1 cup
  • Black Eyed peas - 1/2 cup (soaked in water overnight)
  • Green Chili - 2 -3 depending on how spicy your taste buds can afford
  • Turmeric Powder - 1 teaspoon
  • Red Chili Powder - 1 teaspoon
  • Salt - to taste
  • Coconut Oil - 1 tablespoon
  • Curry leaves - A bunch

Let's cook it!!

  1. Pressure cook (in a pressure cooker) the pumpkin, peas, green chili, turmeric powder, chili powder and salt in about 2 cups of water for 3 whistles.
  2. Once the cooker cools down and the pressure releases completely, open the cooker and mix them well. Add coconut oil and curry leaves to the curry and mix them well.
Serve it hot with rice. You can make the curry more rich by adding about a cup coconut milk to the warm curry.
