Roasted Banana Nut Bread
Roasted Banana Nut Bread is a very delicious and easy to make bread. It's a perfect snack to munch on for your tea time. My weekly over-ripe of bananas motivates me to bake this bread every week:) This is one of my favorite method of baking banana bread. Roasting of the banana adds a unique flavor and aroma to the bread. Give it a try on this roasted banana recipe and taste for yourself.

What all you'll need?

  • Ripe Banana -3-4
  • Whole Wheat Flour - 1 cup
  • Rolled Oats - 1 cup
  • Baking Powder - 1 1/2teaspoon
  • Baking soda- 1/2 teaspoon
  • Salt - A pinch
  • Egg- 2
  • Ghee/Clarified Butter - 1/2 cup
  • Brown Sugar/Honey - 1/2 cup
  • Vanilla Extract - 1 teaspoon
  • Buttermilk - 1/4 cup-1/2 cup (depending on the consistency)
  • Toasted Walnuts - 1/2 cup
  • Dark Chocolate Chips - 5 tablespoons

Let's cook it!!

  1. Preheat oven to 350 degree Fahrenheit.
  2. Place the bananas(with skin) on a cookie sheet lined with aluminum foil and roast it in the preheated oven for about 20-25 minutes. 
  3. After roasting, keep it out of the oven for cooling. Once its cooled peel the bananas, mash them well and keep it aside.
  4. Grease a bread loaf pan with non-stick cooking spray or butter and set it aside.
  5. Add ghee/clarified butter and sugar to a large mixing bowl. Mix them well using a hand mixer until its creamy in texture.
  6. Add egg, one at a time,  to the sugar-ghee/clarified mixture(Step 5) and mix until everything is incorporated well. Add roasted bananas and vanilla extract to the mixture and mix them well.
  7. Add whole wheat flour, rolled oats, baking powder, baking soda and salt to another bowl and mix them well.
  8. Incorporate dry ingredients (from Step 7) to wet ingredients(Step 6) slowly by adding buttermilk as required to form a bread batter of medium consistency. Fold in walnuts and dark chocolate chips to the batter.
  9. Transfer the batter to the greased bread loaf pan (Step 4) and decorate the top with some oats and walnuts. Bake it for about 45-50 minutes, until a toothpick inserted into the bread comes out clean. 
  10. Remove bread from the loaf pan and transfer to a wire rack for cooling.
  11. Slice it into pieces and enjoy it as a tea-time snack.
