
An easy to bake healthy bread recipe!!!! The moisture content of Zucchini makes it an ideal vegetable to be the part of any baked bread or cake. Whole wheat zucchini bread is a perfect snack to go with an afternoon tea or coffee.

What all you'll need?
- Whole Wheat Flour - 1 cup
- Rolled Oats - 1/2 cup
- Grated Zucchini - 1 1/2 cups
- Dark Brown Sugar - 3/4 cup
- Baking Powder - 1 teaspoon
- Baking Soda - 1/2 teaspoon
- Salt - 1/8 teaspoon
- Egg - 1
- Coconut oil - 1/3 cup
- Buttermilk - 1/3 cup
- Cardamom powder - 1 teaspoon
- Vanilla Extract - 1 teaspoon
Let's cook it!!
- Preheat oven to 350 degree F/180 degree C
- Spray a bread loaf pan with non-stick cooking spray
- Add whole wheat flour, oats, baking powder, baking soda, salt and cardamom powder to a bowl and mix them well.
- In another bowl whisk, egg, oil, buttermilk, sugar and vanilla extract. Add the flour mixture (Step 3) and mix them well.
- Fold in grated zucchini to the batter and mix well.
- Transfer batter to the prepared bread pan (Step 2) and bake it for about 45-50 minutes until a toothpick inserted in the center of the loaf comes out clean.
- Take the pan out from oven and let it cool for 15 minutes. Once it's cool, transfer the whole-wheat zucchini bread to a wire rack.
- Slice it and enjoy the snack!
