Plantain Fry

This is one of the popular snack in the southern parts of India called Pazhampori/ethakkappam.It is very easy to make and can be served as an evening snack.

Wat all you'll need?

  • Ripe plantain - 2
  • All purpose flour - 1 cup
  • Sugar/Molasses/grated - 5 tablespoons
  • Oil - As required for deep frying
  • Water - As required
  • Cardamom powder - 2 teaspoons

Let's cook it!!!

  1. Cut the plantain lengthwise into 2 pieces and then cut those pieces vertically into 2.
  2. Make a semi thick batter using flour, water, sugar/Molasses/jaggery and cardamom powder.
  3. Coat the plantain pieces in the batter and deep fry in oil till it turns golden brown in color.
  4. Place the fried plantains in a paper towel to drain the excess oil.
Crispy plantain fry is ready to be served with a cup of hot tea or coffee

You can always increase or decrease the amount of sugar depending on how sweet you want. If plantains are very ripe you can reduce the amount of sugar.
If using jaggery, heat water in a pan and add the jaggery pieces. Wait until its melted. Turn off the stove and let it cool. Add all purpose flour to the jaggery syrup and rest follow the procedure.
