This is a very healthy rice dish and it's easy to prepare. Its also known as vegetable pulav or vegetable fried rice.

What all you'll need?
- Basmati Rice - 2 cups
- Veggies - 2 cups(You can use any veggies you like, I usually go with green beans, carrots, cauliflower, sweet peas, broccoli & bell pepper)
- Onions - 2 Medium sized sliced lengthwise
- Ginger Garlic Paste - 3 tablespoons
- Cinnamon - 1" stick
- Cloves - 3-4
- Cardamom - 3-4
- Black Pepper - 4-5
- Bay Leaves - 2
- Butter - 3 tablespoons
- Cilantro - A bunch chopped
- Mint - A bunch chopped
- Salt - As required
- Water - As required
- Cashew nuts - 2 tablespoons
- Sun dried Raisins - 2 tablespoons
Let's cook it!!
- Soak basmati rice in about 4 cups of water for about an hour.
- Cut beans and carrots into 1" pieces lengthwise. Cut the florets of cauliflower and broccoli and keep it aside. You can also use a frozen pack of mixed veggies to save time.
- Once the rice is soaked cook it in a rice cooker in about 4 cups of water with whole spices, mint leaves, salt and a tablespoon of butter.
- In a pan stir fry the onion, ginger garlic paste and the veggies in the respective order using rest of the butter and a little bit of salt until its well cooked.
- Add cooked rice, cilantro, cashew nuts and raisins to the mixed veggies. Mix it well.
