Cabbage Rice


 Cabbage shall be used in a pulav kind of preparation of rice. It's not only an easy to cook dinner, but also a healthy meal with almost equal amounts of rice and cabbage making up the meal.

What all you'll need?

  • Rice - 1 cup
  • Cabbage - 1 small size cut into small pieces
  • Ginger - 1" piece chopped into small pieces
  • Curry leaves - A bunch
  • Mustard Seeds - 1 teaspoon
  • Urad Dal - 1 teaspoon
  • Cumin Seeds - 1 teaspoon
  • Dried Red Chili - 1
  • Coriander seeds - 2 teaspoon
  • Mint Leaves - A bunch chopped into small pieces
  • Cilantro/Coriander leaves - A bunch chopped into small pieces
  • Cinnamon Stick - 1 small piece
  • Cardamom - 1
  • Clove - 2
  • Grated Coconut - 1/2 cup
  • Bay Leaf - 1
  • Green Chili - 2-3
  • Coconut Oil - 2 tablespoon
  • Salt - As required
  • Turmeric Powder - 1 teaspoon
  • Chili Powder - 2 teaspoon
  • Water - As required

Let's cook it!!

  1. Rinse the rice in water and drain it well. Cook the rice in a pressure cooker with a pinch of salt for three whistles. Turn off the stove and let it cool.
  2. While the rice is cooking, grind coconut, mint, cilantro, coriander seeds, bay leaf, cinnamon stick, cloves, cardamom, green chili and some curry leaves to a coarse paste in a mixer/grinder.
  3. Heat a pan and add oil. When the oil is warm, add mustard seeds, cumin seeds, urad dal, dried red chili and curry leaves.
  4. Once the mustard seeds splutter add ginger and coarse spice paste (Step 2) to the pan. Saute it well for 1-2 minutes until its raw smell is gone.
  5. Add the chopped cabbage to the pan. Add turmeric powder, chili powder and salt to the cabbage and saute them well. Cover the pan with a lid and let the cabbage cook in medium flame to about 5 minutes.
  6. When the cabbage is soft and tender, add the cooked rice and mix them well.
Garnish it with mint and cilantro. Serve it hot with yogurt/curd and papad.
